Ingredients
1/2 cup unsalted butter (melted and hot)
1 1/8 cup superfine sugar
2 large eggs
1 tablespoon cooking oil
2 teaspoons vanilla essence
1/2 cup all purpose floor
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
Instructions
1. Preheat oven to 175°C
2. Grease and prepare baking pan. Line with parchment paper and set it aside.
3. Combine hot melted butter, cooking oil and sugar together in a bowl.
4. Whisk for about a minute.
5. Add eggs and vanilla. Beat until colour lightens.
6. Sift flour, cocoa powder and salt in the wet mixture.
7. Fold the dry ingredients in the wet ingredients. Do not beat the mixture.
8. Pour batter in baking pan and even it out.
9. Bake for 20-25 minutes or until brownies no longer jiggles. Test by sticking a toothpick in the middle. Toothpick will come out dry or dirty(for fudgy brownie)
10. Remove and allow to cool to room temperature before slicing into pieces.
* Optional to add chocolate chips, nuts(almonds/walnuts/pecans), peanut butter, died fruit(raisins).
ENJOYYY THIS SWEET CHOCLATEEY TREAT! I have baked this several times and the batch always finishes in 2 days at home! Worth it!
